2024 NORTHERN SPY
Helen and Phil of Chapin Orchard grew the apples for this cider at their iconic farm in Essex. Northern Spy is a versatile variety that delicately balances sugar, acid, and tannin. Chapin has just a few Spies but their juice is a key component in the orchard’s famous fresh cider. When fermented, Northern Spy produces a cider with great transparency, able to express the character of a place and time with delicious precision. Chapin is where Kevin grew up picking apples and it’s been a dream of his for many years to make cider from this orchard.
Spontaneous ferment. Stainless. Traditional method sparkling, undisgorged. Dry.

2024 HEIRLOOM
Rick and Amy of Cobble Knoll Orchard grew the apples for this cider at their beautiful farm in Benson. Clinging to a steep, west-facing slope overlooking the southern Champlain Valley and Adirondacks, the couple meticulously and lovingly grow over 80 varieties of apples. The orchard is a cidermaker’s dream. We tasted fruit with Rick and discussed the style of cider we like to make, and he pressed us the most delicious apple juice we’ve ever tasted. A blend of 8 different varieties from the orchard, mostly sharps.

2024 PERRY
Bill and his team at Champlain Orchards in Shoreham grew the Potomac pears for this cider–a European pear variety that’s a cross of Beurre d’Anjou and Moonglow. The cranberries were grown by Bob of VT Cranberry Company at his bog in Fletcher.
Potomac pears fermented dry, then rested on pressed cranberries for 48 hours and pressed again. Stainless. Traditional method sparkling, undisgorged. Dry.
